Delicious Mango Cheese Cake |
Ingredients for crust
1½ cups cracker crumbs
½ cup sugar
6 table spoons (3/4) unsalted butter (melted)
For filling:
3 Large ripe mangoes (chopped)
½ cup cream cheese
1¼ cups sugar
2 table spoon vanilla essence
4 Eggs
Sliced peeled pitted mangoes

Method:
For crust:
Preheatoven to 325°F. Lightly butter 9-inch diameter spring pan with 2 ¾inch high sides. Stir cracker crumbs and sugar in medium bowl to blend. Add meltedbutter and stir evenly moistened. Press crumb mixture firmly onto bottom (notsides) of prepared pan. Bake until crust is set, about 12 minutes. Cool completely.Maintain oven temperature.

For filling:
Pureemangoes in processor until smooth. Set aside 2 cups mango puree (reserve anyremaining puree for another use). Beat cream cheese, sugar, and vanilla essencein larger bowl until smooth. Add eggs 1 at time, beating well after eachaddition. Add2 cups mango puree and beat until well blended. Pour filling overcrust in pan. Bake and beat until well blended. Pour the filling over the crustin pan. Make until set and puffed and golden around edges (center may move veryslightly when pan is gently shaken), about 1 hour and 25 minutes. Cool cake for1 hour. Refrigerate uncovered overnight. Run small knife between cake and sidesof pan to loosen. Remove the pan sides. Transfer cake to platter. Cut into wedges and serve with sliced mangoesor you can simple decorate it the way you want like mango puree and freshcream.
